Vegan Muffins

Abner Adams House loves to serve our guest home-made baked goods.  We always strive to meet our guests dietary needs.  We have always found vegan to be a challenge!  That was before I started eating vegan and researched many vegan recipes.  I prefer to cook with items that I have on hand and not purchase something that I may not use again.   We now have a large list of vegan recipes that are tried and true and so good we serve to all our guests. Try these vegan muffins, you will love them.  Let us know what you think. Mixed Berry Muffins 2 cups all-purpose flour 3/4 cups sugar 1 tbsp baking powder 1/2 tsp salt 1/3 cup soy yogurt 1/2 cup almond milk (or your favorite non dairy creamer) 1/2 cup canola oil 2 tsp pure vanilla extract 1 1/2 cups frozen mixed berries (blueberries, raspberries, black berries) Preheat oven 375 degrees.  Lightly grease a muffin tin. In a large mixing bowl, stir together flour, sugar, baking powder, and salt.  Make a well in the center of the flout and add the yogurt, milk, canola oil, and vanilla.  Stir to combine.  Fold in the frozen berries. Spoon the batter into the muffin tin; it should almost fill the entire tin.  Bake for 26 – 30 minutes or until a toothpick or butter knife comes out clean.  Let cool for a few minutes in the tin.  Remove and cool completely.  These freeze well. Fairport Canal Days, Two days of fun will vendors of arts, crafts, food, demonstrations, dance and music.   Ride the Colonial Belle and learn the history of the Erie Canal. Hope to see you there!

French Toast Souffle

Decadent recipe that our guests always ask for the recipe! 10 Cups cubed sturdy bread 8 oz cream cheese 8 eggs 1 1/2 cups whole mile 1/2 cup maple syrup (real NYS syrup) 2/3 cup half and half 1tsp vanilla 9 x 13 pan (OR you can divide recipe into individual dishes like we do) Spray pan and place bread cubes in pan.  Beat cream cheese, med speed till smooth.  Add eggs 1 (one) at at time beating well.  Add milk, half and half, maple syrup, vanilla. Pour over cubes and refrigerate overnight. Remove from refrigerator 30 minutes before baking. BAKE   375 degrees for 50 minutes   (if individual servings bake until set) Serve with NYS warmed Maple Syrup, garnish with fresh raspberries, blueberries etc. YUMMM!!
