Vegan Muffins

Abner Adams House loves to serve our guest home-made baked goods.  We always strive to meet our guests dietary needs.  We have always found vegan to be a challenge!  That was before I started eating vegan and researched many vegan recipes.  I prefer to cook with items that I have on hand and not purchase something that I may not use again.   We now have a large list of vegan recipes that are tried and true and so good we serve to all our guests. Try these vegan muffins, you will love them.  Let us know what you think. Mixed Berry Muffins 2 cups all-purpose flour 3/4 cups sugar 1 tbsp baking powder 1/2 tsp salt 1/3 cup soy yogurt 1/2 cup almond milk (or your favorite non dairy creamer) 1/2 cup canola oil 2 tsp pure vanilla extract 1 1/2 cups frozen mixed berries (blueberries, raspberries, black berries) Preheat oven 375 degrees.  Lightly grease a muffin tin. In a large mixing bowl, stir together flour, sugar, baking powder, and salt.  Make a well in the center of the flout and add the yogurt, milk, canola oil, and vanilla.  Stir to combine.  Fold in the frozen berries. Spoon the batter into the muffin tin; it should almost fill the entire tin.  Bake for 26 – 30 minutes or until a toothpick or butter knife comes out clean.  Let cool for a few minutes in the tin.  Remove and cool completely.  These freeze well. Your friends will rave about these muffins!  ...

Fireworks Extravaganza at the Genesee Country Village and Museum

Genesee Country Inn Bed and Breakfast Where has the summer gone?  It’s already the end of August and time to be thinking about back-to-school shopping, Labor Day weekend activities, and of course, preparing for fall clean-up.  This is the last chance to get that outdoor painting finished, clear out the summer garden and prepare for the mums to bloom and the weeds to finally subside.  It amazed me that even during the dog days of summer when there was not a drop of rain to be had, the weeds flourished!  We didn’t even cut our grass all of July.  Nothing grew except our weeds.  Those had to be yanked out on a regular basis. This weekend, the Genesee Country Village and Museum will hold their Firewords Extravaganza beginning at 5:00 PM.  Each year, droves of museum lovers visit the Village to enjoy the fireworks interwined with a story relavent to the holilday.  This year RJ and I will make our way up there with some friends and guests to enjoy the event. In the meantime, RJ is busy staining the barn. Visit us on Twitter to see our progress. ...
